1. What's the kitchen size?
Better there is a dimension of the kitchen, including all details, length,width,height. And all information that will have effect on placing a equipment. For example, if there is pillar in the kitchen, it's important to tell the designer.
2. What cuisine is going to provide?
Different cuisine will come with different cooking equipment based on different fucntion. For example, if it's an Italian restaurant, we will provide basic cooking equipment, gas range, griddle and fryer. If it's a seafood restaurant, equipments will be different, maybe we will add one more combi oven for steaming or lave rock grill for BBQ.
3. Where is the entrance and exit of the kitchen?
Every kitchen will have its own working flow, so entrance and exit are very important for designer to set the working flow line. We hope to provide a smooth working flow line, so that chefs will work easily and safely.
4. What's the desired capacity of guest flow every day?
Guest flow of reception for every meal decides the kitchen equipment sizes. Equipments are with different sizes, small,medium and large, working capacity decides equipment capacity.
