With more than 18 years of experience in hotel kitchens and a proven track record of delivering kitchen solutions for 5-star hotels and fine dining, SHINELONG has proven the ability to set up a professional kitchen for any luxury hotel.
Working closely with Executive Chef Jean Louis Leon and the hotel owners, SHINELONG faced a multi-layered challenge. First, the kitchen had to support five distinctly different culinary operations, from the delicate baking temperatures required at Maison Patisserie to the high-volume, fast-paced demands of Rhapsody Asian Fusion.
Second, implementing Chef Leon’s "farm-to-table" initiative required specialized, high-performance cold chain storage to maintain the absolute freshness of locally sourced Mindanao ingredients. Finally, installing heavy commercial equipment on the upper floors demanded meticulous logistical planning and precise spatial engineering within the iconic Aeon Tower.
SHINELONG transformed the hotel's culinary vision into a seamless operational reality by designing a centralized main production kitchen integrated with specialized satellite kitchens for each venue:
