The component that ignites the flammable gas might be dirty or worn out. Grease is the enemy here; if pilot nozzle is gunked up with old cooking oil, the gas can't escape properly. Grab a thin wire or a pin and gently clear the path.
Alternatively, the problem might be the thermocouple. This little safety sensor is designed to shut off the gas if it doesn't sense heat. if the thermocouple is damaged or misaligned, it will "think" the fire is out and cut the gas flow, even if you’re standing there with a lighter.
