In the field of commercial kitchen equipment, the magnetism of stainless steel is mainly determined by its crystal structure:

Austenitic Stainless Steel (such as the common 304 series): This type of stainless steel is usually non-magnetic or weakly magnetic in the annealed state. Ferritic and Martensitic Stainless Steel (such as 430, 410 series): The crystal structure of this type of stainless steel contains ferrite or martensite, so they are magnetic. They usually have high strength and hardness and are often used to manufacture knives or equipment shells with relatively low corrosion resistance requirements. Therefore, using a magnet to attract is not a scientific method to judge the quality of stainless steel.
